Diet coke cupcakes.

A few weeks ago my friend Chastity told me about cake made with diet coke.  I love cake and diet coke even more than cake.  I decided my first recipe here should be diet coke cupcakes.  Please note that I did not make this recipe up, it is apparently an old Weight Watcher recipe.
Getting ready to cook.

So, this couldn't be easier.  A box cake mix and a can of diet coke.  I made a special trip to Wal*mart to get the cake mix.  I started with half a box because I wasn't convinced I was going to like these and because I was pretty sure I didn't need 24 cupcakes on hand. I chose the cheapest mix in dark chocolate ($.96) and I always have diet coke on hand.  Start by preheating your oven to 350F.  Dump the cake mix in a bowl and add the can of coke and mix until you have batter. If you are making a cake grease the pan.  I decided to go with cupcakes because I just love them so much.  Here is a picture of the mix:
I think it looked a little weird, but seemed to be the right consistency.
Line the pan with those little paper muffin cups and spoon the mixture in.
A shot of all you need to make these delicious (and low fat and calorie!) treats.

A different shot.  Messy.
I use a gas oven and it tends to be a little hot, so I actually set it for 325F.  I baked them for about 20 minutes.
Just in case you have never seen an oven dial.
About midway through baking, they look pretty normal.
When a toothpick came out clean I took them out of the oven.  And here they are:
Look pretty good don't they?

Someone suggested topping with fat free cool whip.  I kinda hate cool whip, so I topped with some of that whipped cream from a can.
Topped off.

The verdict?  They are a little more dense than a regular cupcake from a cake mix.  However, they are delicious. It is now 1:30 in the morning and I think I will make a little poutine.  This is a Canadian treat.  Stay tuned for how to fix this late night delight.

A Brief Introduction.

This is the 3rd blog I have tried to write.  It is sort of strange, because I have always been quite prolific.  My biggest problem is that I get super excited about something and work on it for about a week, and then give up.  I am not sure if that is because I have ADD or for some other reason.  I guess the reason doesn't really matter.
I decided to start a new blog last night, when I decided to make oven fries. I figured that out there in the blogisphere there would be other night owls who would appreciate my adventures in late night cooking.   I should have posted for the first time last night, because the fries turned out really tasty. I will make them again soon, so you all can see the finished product.
I also think it is important for you all to know that I am not wealthy, that I live in a trailer and my kitchen is far, far, far from gourmet.  This is important because that means anyone can do what I do.  It is easy and fun.  Here is a picture of my kitchen to prove my point:
I did not even clean it.  This is what it looks like most of the time.

I am currently unemployed, and other than watching A LOT of TV I don't really have a lot to do. I have always been a night owl and since I have no reason to get up during the day, I stay up all night.  This makes sense to me because during the day I feel guilty if I am not productive.  However, at night when the world is still and most people are sleeping, I feel fine just hanging out.  This blog will be the evidence that I just don't sit around doing nothing.  I hope you can get some inspiration from what fills my nights.
