A few weeks ago my friend Chastity told me about cake made with diet coke. I love cake and diet coke even more than cake. I decided my first recipe here should be diet coke cupcakes. Please note that I did not make this recipe up, it is apparently an old Weight Watcher recipe.

So, this couldn't be easier. A box cake mix and a can of diet coke. I made a special trip to Wal*mart to get the cake mix. I started with half a box because I wasn't convinced I was going to like these and because I was pretty sure I didn't need 24 cupcakes on hand. I chose the cheapest mix in dark chocolate ($.96) and I always have diet coke on hand. Start by preheating your oven to 350F. Dump the cake mix in a bowl and add the can of coke and mix until you have batter. If you are making a cake grease the pan. I decided to go with cupcakes because I just love them so much. Here is a picture of the mix:

Line the pan with those little paper muffin cups and spoon the mixture in.

I use a gas oven and it tends to be a little hot, so I actually set it for 325F. I baked them for about 20 minutes.

When a toothpick came out clean I took them out of the oven. And here they are:

Someone suggested topping with fat free cool whip. I kinda hate cool whip, so I topped with some of that whipped cream from a can.

The verdict? They are a little more dense than a regular cupcake from a cake mix. However, they are delicious. It is now 1:30 in the morning and I think I will make a little poutine. This is a Canadian treat. Stay tuned for how to fix this late night delight.
